Hello, I have looked at this forum quite a few times in the past, but I've recently bought a Bradley digital smoker, and decided I should make an account.
We bought it a week ago, and last weekend i made pork chops and short ribs on friday, ribs on saturday, and a brined turkey on sunday. I've just got a pork shoulder swimming for tomorrow, going to try pulled pork.
We live in Calgary, AB, Canada, and have had unseasonably mild (read: damn cold) weather this Spring, and I think that's where my only frustration has been, I've been trying to stick to low cooking temps, but even my ribs weren't fully finished after 6 hours.
My wife and I are big foodies, and love to cook (she actually bought the smoker, not me). We have a few pretty good bbq places in town, but we wanted to make our own. We have an awesome kitchen, excellent cookware, (I worked at Le Creuset for a year, that was an amazing staff discount) and with no kids, we entertain a lot. We don't have a bbq, but are trying to decide between going with a weber summit s-470, or a charcoal grill.
As for smoking, I would just like to make the best possible food I can, for myself, friends & family. I'm very anal when it comes to cooking, and know already I'm striving for competition-quality results. (i know i'm a few years off, and i'll never have the time or money to actually compete). My next few purchases will definitely include a PID and probably an iGrill (i'm a geek, too).
