Hello, I'm Joe. Just found this forum and it looks pretty interesting. I'm about 30 minutes south of Dallas Texas, and I really don't know what kind of smoker I have. It's a big one, my wife bought it for me for my birthday from a guy in Waxahachie who makes smokers. His name is Bernie Burns, anybody down here probably already knows him. I've smoked twice in my life, and the first time was horrendous. I fired up this new smoker last week and did some ribs it came up pretty good. I have a lot of work to do I'm looking forward to reading the forums and corresponding with you guys.
