I have been eating BBQ for about 50 years and finally decided to try my luck at smoking my own.  I bought a Oklahoma Joe's offset smoker last fall.  It's a very heavy duty and serious smoker.  I smoked a couple of racks of ribs, which turned out great and then smoked a 12 pound turkey for Thanksgiving.  My wife did the traditional turkey in the oven.  My smoked turkey was a hit.  Since then I have smoked pork ribs, boston butts, beef roasts, vension and chickens.  I am experimenting with my own rubs and mop sauces.  I spend a lot of time on the Internet looking for new ideas to try.  I am keeping a journal so I can learn from my mistakes and perfect my techniques.  I will be cooking boston butts on the smoker and burgers and dogs on the gas grill for our fall party in September.  Last year we had 109 guests and had a pig on a smoker, not mine.  This year I will be doing the smoking.
