HI, I've played with a smoker box and gas grill a few times, but yesterday was my first charcoal run (ever, I'm a longtime gas grill guy) on a really old "Mr. Meat Smoker" vertical smoker, baby back ribs, Cherry wood that I chunked by hand. I put a rub on the meat, wrapped in foil with "Not Your Father's Root beer" and butter then finished with Sweet Baby Rays (3-2-1 method). The family enjoyed the meal, came out good. The smoker was free, the wood was some that I harvested after it was damaged in a storm. I was intimidated by the thought of nursing the charcoal for 6 hours, (I lose focus sometimes). Maybe it was beginners luck but the success has inspired me to seek you all out, I just want to learn from others experiences as I explore and attempt different smoking endeavors.
