HI, I've played with a smoker box and gas grill a few times, but yesterday was my first charcoal run (ever, I'm a longtime gas grill guy) on a really old "Mr. Meat Smoker" vertical smoker, baby back ribs, Cherry wood that I chunked by hand. I put a rub on the meat, wrapped in foil with "Not Your Father's Root beer" and butter then finished with Sweet Baby Rays (3-2-1 method). The family enjoyed the meal, came out good. The smoker was free, the wood was some that I harvested after it was damaged in a storm. I was intimidated by the thought of nursing the charcoal for 6 hours, (I lose focus sometimes). Maybe it was beginners luck but the success has inspired me to seek you all out, I just want to learn from others experiences as I explore and attempt different smoking endeavors.

Welcome David! Where about in Indiana are you? I'm also in IN up north near the lake (LaPorte).

You've come to the right place to learn. Tons of great information on here and everyone eager to help and provide feed back. Don't forget to post pictures when you can.

Smoking like other things, it can be intimidating at first, especially when you don't know a lot. But the good part is you get to eat your mistakes and they still taste pretty darn good. As far as "nursing the charcoal", get yourself a couple wireless thermometers and place one on the grill. Set a low temp threshold and it will tell you when your cook needs attention. Don't forget to put one in the meat to let you know when it's done.

Look forward to some of you cooks.

Welcome to the forum. Glad to hear that your first smoke was a success. It's always good inspiration with your cook goes off well. You will learn plenty on this forum. Just look around and ask any questions that come to mind. We also love to see pictures of your cooks. So please share your success.
