New guy here, have a question

I am forever having difficulty tying knots in my sausage casings. I think I'm leaving the casing too short, but I kinda hate wasting a bunch of casing to make an easy knot. Is there a trick?

I tie a simple overhand knot in the starting end and tie off the other end with butchers twine.
