Hi, I bought a Masterbuilt Pro from Home Depot...I thought I would try a rack of ribs for my first attempt which I think are about 2/3 done as I type this....I put waaaay to much wood chips in ( if some is good, then more is better...)...
Looking forward to learning!

Well, the ribs were waaay toooo smoky, and the BBQ sauce should have been added just before the end, not at the beginning.
Tomorrow I'm going to try a boneless pork loin. I rubbed it with Moroccan rub from Dean & Deluca on Saturday morning...Ill cut the wood chips back to 1 cup, and I'll seal up the holes in the wood chip tray with foil as recommended here. I've also asked for a remote meat thermometer for Fathers Day.
 
Hi Bob, welcome! Yes it can be easy to over-smoke something. Well, you learn something with every try.

You might consider starting a log book like brewers do, recording all of the details like meat, wood, time, temp, flavorings, etc. Then when you hit on something you really like, you should be able to duplicate it.
