  1. Hi ya'll, I'm Charles and I have been smoking food for technically many years, but it was commercially when I worked in a locker plant. Now I started smoking at home and even though I've only done two pork shoulders and some cheese, I'm loving it. When I worked as a butcher it was just another part of my job, but now at home it's enjoyable. It's a nice hobby that my wife and I do it together. We also enjoy fishing together and can't wait to do some fish. Our son is an avid hunter and we have lots of goose breasts and venison in the freezer that I need to get working on too.

I currently own a LEM electric smoker (it's ok I guess), an offset, and an AMSN 6x6. Next year I plan on purchasing another smoker, but am unsure which one yet.

Here's my second try at a pork shoulder
