Hi everyone. I've recently gotten into learning to smoke ribs and am completely addicted. At first I had a kettle smoker with no vents or any way to control the heat. I just upgraded to the WSM and am amazed how much fun it is. Here are some pictures from my last smoke. I used the 3-2-1 method with 2 chunks of peach wood and a chunk of hickory wood and spritzed with apple juice every hour. I think next time I'll try adding apple cider vinegar to the apple juice to see if I get a different flavor profile. I smoked them for the first 5 hours at 230 then the last hour kicked the temp up to 250-260. The ribs turned out juicey and tender.

Sounds like you're off to a good start with your WSM. I have one too and I enjoy it a lot. Your ribs look great. Good luck , man.
