Hi all, I’ve been lurking off and on for a few years. I have used a “no name” wood burning offset smoker in the past.

Got a MES 30 Gen 2.5 for Christmas this year J I’ve ordered the AMNPS, so should get it in a couple of days.

I keep coming back to look up questions I have...and there's lots of them. I'm sure you will hear from me again.

Welcome, you certainly picked one of the more popular smokers, and yes there is a ton of information on the MES here. My FIL was from St. Louis and we took him there to see his mother before she past away. Man I tell ya, I'll take our -10* weather over the heat there.
