Hey there, Im Steve from Brisbane, Australia. A couple of years ago I was lookin for a new gas grill but instead bought an offset 'Texas smoker' . I had never even seen one before or had any idea how to use it, but it looked cool, the bloke at the shop gave me a crash course and off i went. I fired it up a few times and found it difficult to use especially when it came to hitting higher temps and holding them, it was frustrating.! So it sat idle for a while. During that time I did alot of research much of which was on Smoking Meat Forums, I made quite a few mods, purchased a quality digital thermometer and banged out a few simple recipes with satisfying results. I can now 'dial in' the desired temp and hold it for hours, using less fuel than before. This is a great site and I enjoy the enthusiasm shown throughout. We're very fortunate to have the means to enjoy and share our hobby/lifestyle across the globe...
