Hello to all. My name is Skip and I live in northern Colorado. I will be retiring this June after 28 years as an air traffic controller and supervisor. My wife and son have decided to roll my retirement/birthday/Father's Day gift into one and buy me a new grill. I am leaning towards an offset smoker instead and I'm anxious to go shopping. She has complained tirelessly about my ability to cook burnt offerings on a standard grill (i.e. steaks that taste more like beef jerkey or shoe leather) so I'm very excited about starting at zero and learning how to smoke meat instead.

My interests will focus on brisket, ribs and pork shoulders and the accompanying side dishes (I've already copied the recipe for WBB).

Good evening Skip and welcome to SMF from another Coloradoan! Glad to have you with us. Congratulations on the pending smoker/grill.       I have an MES 40 (electric) so unfortunately I've no experience with charcoal/wood/propane smokers, but I'm willing to learn.

If you could please update your profile to include your location would be very helpful when it comes to offering advice.

Welcome to the SMF Family Skip. Wow-you don't even have a smoker yet and already you're planning on making my WBB-I am truly humbled. You can always change up that recipe to suit your taste-some start out mild and then work toward the heat-some just go with the original and adjust the next batch from there.Enjoy the Smoke!
 
My employees got together and bought me a $350 gift card to Bass Pro Shop, so my wife and I went shopping yesterday. They have a large, fairly new store in Denver and it was a sight to behold. I got the Masterbuilt 40" electric smoker upon recommendation from a coworker. Bass Pro Shop price matched Sam's Club and I got the unit for $299.98, about $150 below MSRP and about $130 below the advertised Bass Pro price.

I've signed up for the 5 day course last week but have yet to receive any additional information from that.  I have seasoned the smoker and I'm ready to rock. Once I find a suitable rub, I will be trying pulled pork for my first attempt.
 
Hey Skip was that the new 2012 MES 40 or the older model? We're supposed to be getting a Bass Pro in Colorado Springs sometime next year and I just saw on Cabela's they are planning two more stores in Colorado - 1 in Thornton and 1 in Lone Tree. Both scheduled to open in 2013. 
 
It was the newer model. Bass Pro had both on display at their store and the only difference that I could tell was the location of the control panel on the top, which has been moved towards the front.
 
I have a couple of questions to add to this post because I'm not sure how things work in the forums. I bought Jeff's rub, thinking it would be an instant download via PDF file or something. So far, nothing. Is this going to come by mail? because if it is, I have to change my plans quickly and freeze the meat I just bought.

Second, I subscribed to the 5 day course last week - also nothing so far. I have a wife demanding some pulled pork and when a vegetarian starts demanding meat, it's a dangerous thing.
