I had been toying with the idea of adding to my arsenal with a pellet grill/smoker, so after some research and shopping around I picked up a pretty good deal (through Amazon - came with the full-length cover!) on a Camp Chef Smoke Pro DLX. I started looking at some upgrade parts and I added the collapsible front shelf and a blanket for smoking during the cold weather here in NY. I was looking at their upgraded controller that has 2 probe inputs (only 1 on the DLX) and also the hopper that comes standard on the Woodwind, which can handle 4 or 5 extra pounds of pellets, has a window and a bottle opener. Well the grill arrived today and much to my surprise it's already got the upgraded hopper and controller on it! Assembly was a breeze, no issues at all and the thing is built like a tank. Tomorrow I'll burn it in and this weekend I'll do a cook of some kind and test her out. I may just go ahead and check the temp readings against my good Smoke thermometer and see what we get. Update to follow.

Enjoy the new rig! I’ve got a camp chef smoke vault and have loved it. They sell great products. Trying to convince the wife to let me buy the camp chef 36” flat top griddle but haven’t worked my way up that just yet
 
So after initial burn in I did 5 racks of babybacks and they came out just great. I didn't foil or wrap, did the straight 4-4.5 hours and misted them every hour with my usual concoction of 2 parts apple cider, 1 part cider vinegar and 1 part bourbon. I did set them on low smoke for maybe an hour, then I bumped it up to high smoke for an hour and then went the rest of the way at 225. Also did 2 big pans of beans at 350 earlier in the day. Also impressed with how well this thing held temp. on a chilly day in March here in NY. I think the smoker Blanket definitely helped. Only saw very minor temperature swings all day.
