Need some info on smoking

I built my own smokehouse in December of last year and have been extremely pleased with the results. Since I have started smoking meats in there, my 5 year old step-daughter has finally become a carnavore, but she is getting spoiled, she only likes the meat when it comes right out of the smokehouse.

The information I would like to know is how long do you smoke beef and about what temperature to acheive that thick and tender style of peppered Beef Jerky. I'm also wanting to smoke some chesse as well and would like to know the proper temps. and time for that too.

Hi Goose! I would suggest trying out the search bar at the top, you can find answers to almost anything you want to know with it and will get info a lot faster than waiting for someone to post something. When you can't find what you want throw a question out there and I'm sure someone will help you out. There are a lot of great people who just love to share their talents!
