A friend of mine just gave me some yearling buffalo. Its about 11-12 pounds with a third as sausage, a third as steaks, and a third as a roast. I'm thinking I should smoke the roast first, grill the steaks and I have a few ideas about the sausage (some chili and maybe a fattie).

I've never cooked buffalo so any ideas would be greatly appreciated. The above comments are guesses and shouldn't be confused with me knowing the smart thing to do!

You have a good friend.  Buffalo is a lean meat and easy to overcook.  Suggest trimming the fat (buff fat is rancid) and cooking the steaks over medium heat to no more than medium, don't rush.  Keep the roast moist while cooking to medium.

i've never cooked buffalo but i've eaten a buffalo burger.....very good! maybe grind up some of the roast or steaks.
