I just cut that part out. There was no difference other then the discoloration.Weird. Looks like you got the tail end of a run where they switched colors. Did you notice a difference when you stuffed them?

I did a slow temp rise on this. Did Another batch the same way before and it came out perfect. Other then the color they where great.I agree with NEPA, it looks like the casing shrunk leaving the mince exposed. By the looks of the puddle under them you might be running hot and had some rendering of the fat.
I've only been stuffing for a couple of years and use a lot of collagen, but I've not seen anything like that.
Where did you get the casings?
