I am smoking 2 8lb Boston butts. I went to bed at 1am and the IT was at 137 (on its was for 40-140 rule). I woke up at 6:30am and the smoker had died. The IT of the meat was at 150 when I caught it (oven temp was at 70F). I turned my electric smoker back on and set temp for 275. The IT of the meat dropped to 141 before the temps started to rise again. I believe I am safe because I never dropped back below the 140 mark. But I am just wanting to be sure. Any input would be greatly appreciated.
 
It probably was at that safe bacteria killing zone for an hour or more easily. As long as your reheating it your good.. pretend it never happened. It can cool back under 140 for a couple hours and still be ok.
 
Ok. Thanks everyone! I thought I was ok but just wanted to make sure I wasn't convincing myself that I was ok. I really appreciate the input!
