Need an idea for what to smoke with ribs

Butt went on 20 minutes ago. I made the recommended mods on my smoker of putting tin foil in the holes of the wood pan to prevent flare ups. So far it seems to be working great. Got the temp stabilized, and I haven't had to do anything since. Hope it stays that way while we're gone to church.
 
It's been 8.5 hrs and the butt is at 183*. I've had the smoker at a pretty steady 225-230* other than putting other things in and out (burgers and ribs). Got folks coming over in a couple of hours, so I hope the butt makes it there by then. I foiled it when the temp hit 170*, and the temp has steadily risen since then. Smells terrific, though.

How'd it turn out?
 
Very good! I ended up letting the butt get to 195 before I put it in a cooler for about 45 minutes. Maybe I had the thermometer in the wrong spot, but I can imagine it being any more tender. The ribs were really good, too. Apple wood is so good I may never get around to trying anything else. Didn't get any pictures. I was too hungry.

Awesome. I love using apple, especially on pork ribs. Glad to hear it was a hit!
