Need an idea for dinner (smoker only)

Hi All,

I'm looking for ideas for a dinner of 4-6 people. Dinner is Saturday night and only has to be transported about 10 minutes from my house and I can start smoking Friday night, so pretty much anything is possible...

I'm thinking beef or pork, if that helps narrow it down.

I agree with the above, PR if you can afford it.

Or pork loin. This is my favorite cut of pork.

As a matter of fact I just smoked one yesterday!

Agree with everyone above!  The PR is a great choice and everyone seems to get excited about it.  The other great thing about it is you can cook it to a few degrees below your finishing temp.  Let it rest until the IT stops going up, wrap it up, transport it and if possible blast it in a high oven (450-500) to get a nice crust on the outside.  Kind of like a delayed reverse sear. You can treat the pork loin the same way!  I'm sure either way, everyone will be excited to eat a beautifully smoked piece of meat!
 
I agree PR is always an easy meat to cook.You could do a Pork Tenderloin it is another fast cook.
