well i followed nepas ac legg snack stick recipe last weekend except i added some high temp cheddar cheese. they turned out pretty good. they were slightly soft in the middle i wonder was that from them having cheese? 19mm casings btw. i did 135 for 1.5 hours then bumped to 155-160/165 for 3.5 more hours. should i smoke the next batch for longer while gradually increasing the temp? if i do the same recipe as nepas (6 tbs #116) can i substitute for this bbq seasoning or is it stronger and wont need as much for 5# batch?
