I got Myron's book from the lady friend on Xmas. Reading through it I saw that Myron does a marinade for his ribs. The ingredients looked kinda interesting. I usually only dry rub the night before with jeffs rub. I have a large group of people coming over for New Years and wanted to try something different. Anyone on here use this marinade or have any suggestions on whether to do it or not and how long? A lot of posts online on multiple site says it make the meat taste like ham. If I use low salt ingredients would this still be the case?
 
If you're doing a few racks you could always try one or two. Some times it's best to make a extra rack or do it a head of time when experimenting.
 
I don't have his book but if this is the recipe you are talking about, there is nothing that will make it taste Hammy. 9 out of 10 times it is Marinades or Brines that contain Sodium Nitrite that will give a Hammy taste and Color...JJ

Rib Marinade

Makes about 9 cups

1 liter ginger ale
1 quart orange juice
1 1/4 cups soy sauce
2 cups salt
2 1-ounce packages dry ranch dressing mix

In a large bowl, combine all the ingredients. Stir well to thoroughly incorporate. Pour into a large bottle or other container and store, refrigerated, for up to 2 week.

WOW, that's quite the combo of ingredients. Hope it tastes better than it looks on paper. lol
 
I got Myron's book for Christmas from my brother in law, and noticed this recipe as well...sounds rather odd, but am hoping someone out there has tried it before I guinea pig someone first!!
 
Yep thats the recipe. I decided to do a few test racks. Ribs were on sale for $1.99 a pound so I figured if they were bad they wouldnt break the bank. I currently have them on the smoker. I marinated for 5 hours and then rubbed them with jeffs rub. I will tell you the marinade smelled awful. I will post pics when I am they are done.
 
Used it, love it! I decided to inject the marinade in a butt, came out fantastic and no leftovers after the guest gobbled it up!
