My version of Pernil…QVIEW

After reading so many good things about Pernil, I decided to give it a go. I started with a 7 lb. picnic and removed the skin. I know, the skin should be left on but this my experiment, ok. Poked a bunch of slits in it and stuffed them with garlic cloves. Then threw together a wet rub of a package of taco seasoning, hot sauce and olive oil. Slathered that on and then SPOG. Wrapped and put away in the fridge overnight.

Ready for the Mini.

Thanks Roller. This is the first time using the ash delector so I'm not sure what temps I can maintain. Trying for around 275.

Fixed it, I hope...little mini is crusin' at about 280...perfect. Qview to come.

Some tend to fight viciously for the crispy skin, so maybe it is a good idea to remove it!!! LOL
