Thanks!  Still a work in progress, Hopefully will get my side shelf completed this week for the Maverick I just ordered to sit on.  and I'd like to put some wheels on it so its easier to move in and out of the garage.
 
I may be too late ,I used a 2" conduit nipple from Home Depot. I don't know if it will fit the bung. I cut the hole.
 
Hi all, 

Newbie here, I just finished building my UDS. Doing a trial run with 4 pieces of thigh on there to get the grease going in the drum.

My questions is why is my temp probe on the smoker is reading at least 60 - 80 deg difference than my digital?

My dial thermometer is about 50 deg off from my digital. Wish I had a way to calibrate it.

wudy, evening.....  do a side by side check of the two therms... write down what they read and the "real temp".....   make a chart.....  Now you have two therms that are "calibrated"...   so to speak....   Use a liquid filled candy therm, or a digital meter, or a dependable therm for the standard....   check it in boiling water to verify it's accuracy or lack thereof...   be sure to adjust for the temp of boiling water, at your altitude....
