Welcome to my first ever post in any forum!

I’m in the early design stages of a smokehouse build (specs to follow) I’d like to get started on it in the spring. I’ve spent hours upon hours sifting through the thousands of post on this subject but I’m still having trouble making my mind up on a heat and smoke source so I thought I’d reach out to this great community to get some input on the subject.

As far as the structure itself, I’m leaning towards the design that Dave put together in 2013: http://www.smokingmeatforums.com/t/140513/daves-smokehouse-part-9-test-runs Depending on what heat/smoke source I decide to go with my design could change. The bottom line is, I have a blank canvas with lots of options.

I want the option to either cold or hot smoking anything I want. I also like the idea of feeding it and leaving it. I’ve stick smoked for a long time so I understand what it means to be married to your smoker. At this point I’m thinking about installing the Big Daddy Pellet Pooper for a heat source and going with an AMNPS for smoke. However, I am struggling finding good information on the Big Daddy Pellet Pooper. I did read somewhere that it is difficult to maintain a low temperature in the 140 to 160 range with the PP because it generates too much heat. This would be an issue for me.

I also thought about going with a 2000 watt heating element and an AMNPS. The only issue here is getting the 240-volt circuit to the smokehouse. It would be difficult but not impossible.

There is also the option of propane as well but this requires more maintenance with keeping the gas bottles full and there is the safety concerns that come with using propane. I’m not 100% against it but I am a little concerned about this option.    

Specs:

Heat Chamber interior dimensions: 30”x30”x72”

Wall Construction 2x3 fire retardant lumber

Wall Insulation: Fire resistant rock wool

Interior wall skin: Durock Cement Board

Exterior skin: Cedar

Foundation: CMU or Concrete slab

These are just some of my thoughts at this point so I’m am very open to anyone’s opinion and or recommendations.
 
For safety and ease of control, I would stick with electric...  Be mindful of cold weather....  It could take several hours for the smoker to achieve equilibrium at the desired smoking temp...   lots of volume and thermal mass to heat.....  Which is not a problem, just something to think about...  You won't be firing it up at noon for dinner at 6....
 
Hi there. I'll share a built with you that works pretty awsome. There is 2 4 inch intakes, one on each side of the fire box. On the right side of the smoker is a little black kettle grill piped into the firebox for smoke. Adjust the flame with a coat hanger running through the left intake to the gas burner. Hang a couple probes, throw some coals and wood chips in the little grill and let it buck. Goes from about 120 d to over 400 d.

Excellent point. I like the idea of the electric setup but because of your point about heating up all of that thermal mass I was considering the pellet pooper. I guess if I wanted to fire up the smoker in the middle of winter, I do have the option of throwing my turkey frier burner in there until things get warmed up and then remove it and let the heating element take over from there. 

Do you have any experience or knowledge with the Big Daddy Pellet Pooper Pro? 
 
Food grade pellets are a bit pricey to use for heat...  Also, when heating with a pellet "oven", flame is used to burn....   flame consumes smoke...   some folks think they are a bit short on smoke and they don't control well at temps below ~160 ish......    maybe in a bigger smokehouse with good air flow and adjustment, they would work fine...  

I'd still consider electric and an AMNPS or AMNTS for smoke...  get them fired up....  then it's lawn chair and a beer time...
 
I’ve been working on my design for a couple of weeks now so I thought I’d provide an update as to where I am with things.

I’ve changed my mind on the basic design and decided to go with a combination of Dave’s Smokehouse http://www.smokingmeatforums.com/t/140513/daves-smokehouse-part-9-test-runs  and atcnick’s Cedar Smokehouse http://www.smokingmeatforums.com/t/130460/cedar-smokehouse-construction. I’ve attached SketchUp drawings for your viewing pleasure.

I’ve also decided to go with a multi-fuel concept. My primary source of fuel will be an electric heating element and AMNPS. The AMNPS will deliver smoke through a cold smoke mailbox system similar to chrisblunck’s design http://www.smokingmeatforums.com/t/127770/mes-mailbox-mod-for-use-with-amnps. I am also going to allow for a small wood stove that will connect to the back of my smokehouse via a 6” insulated stove pipe which should work for both cold and hot smoking. This idea came when I was hot smoking with my MES-40 and lost power for two hours.
