I did a large batch of cheese the other day.


That looks like Great Dust for the AMNPS.
My Jointer made much bigger flakes that that, more like from a Planer.
In case anyone's interested, I've tried a lot of dusts, and found the best to be from:
Radial Saw
Chop Saw
Miter Saw
Table Saw (Crosscutting)
Band Saw
Table Saw (Ripping)

I set the table at 1/16", and that's what I got. I didn't experiment, just made little ones out of big ones.
I cleaned everything good with compressed air and hooked up my cleaned shop vac to collect the chips.
I didn't quite work as well as my dust collector, but really got most of the good stuff. If there was any fines they wound up in the paper filter.
The cheese tastes good, but a tad strong. I think my basket in my mod is a bit too large and worked ok when started, but tended to run away towards the middle and end.
But today my AMNPS arrived and is in my hands, so going to thaw my Salmon and do a test batch tomorrow. I believe I'll do pellets though to start with.
I want to do a test/break in burn today. Before smoking meat with the AMNPS.
