Store bought bologna is emulsified.

Homemade bologna is like the pic, but you can also emulsify if you wish.

gotcha....thanks nepas. So same general stuff its just how fine its made/mixed.
Yes

One thing tho on the cloth bags. You need to do a full smoke with them to get the IT. If you hot water them the meat will get nasty.
 
I remember when they used to sell sweet lebanon in those types of casings.  Would you mind sharing the recipe, I think I want to try to make it.  By the way they look great and all the sudden I am hungry for Lebanon Bologna!
