did my biggest smoke, ever, monday..........3 racks of spares, beef ribs (boneless chuck, basically), abts, dutch's beans.

ribs were great again......i LOVE this new rub we made up.........tho it was a bit spicy for some of the folks at the party.........liteweights......LLLOLOL

i did a 2-2-1, as usual, and they turned out great........smoked at 250

the beef ribs i took to 160......Chauda does not like ANY pink in her beef ribs........i thought they was a bit tuff, do to this higher finishing temps, but she liked em..........i guess thats all that matters.........
 
Dude, that was indeed a feast for all, congrats on a great smoke and Q too! I have recently gone to using the 2-2-1 method on spares, so far, so good.
