Late post .... it was a busy week.....

My wife and I were invited to a dear friends labor day get together. This is a rarity, as he works for a local Police Department, and our schedules don't align often. My wife has known Officer **** and his wife for decades; I've known them for 10 years or so. It's funny ... my wife and Officer **** and Officer ****'s wife (who wasn't his wife then!) all worked together in their early careers. My wife (before I ever met her) went to lunch with my brother in law, Officer ********, who works with Officer ****, and after my sister passed away, Officer **** came into my life for support of our family. That ultimately led to me meeting my wife ....

ANYWAY! Long story short .... we had an opportunity to gather for the Labor Day holiday. Officer **** loves pork ribs, and his kids do too. So, six racks seemed like a good number.

Seasoned the night before with my favorite, Meat Church Honey Hog on the meat side, and Honey Hog Hot on the bone side ..... I was up at 3am to start the Yoder YS640S .... after 5 hours running at 275F with hickory pellets, I declared them done.

Man, they turned out well. No sauce, no spritz, no nothing but seasoning, smoke, and time. I wrapped them in pink paper, put the in a preheated cooler, and off to the gathering we went.

They didn't last long.
