I started wit an 8.5 lb bone in pork shoulder.

After a nice rub and smoke, I pulled it at 165* to wrap up in foil.


A couple of photos after it hit 200*

That bone slid out and this shredded like nothing else! I hit with a finishing sauce and we chowed. A huge success!

Yeah it was way more intimidating than it actually was. I dressed it with the BDSE sauce which is now my new go to sauce. That sauce was amazing.
 
I used PGSmoker's BDSE BBQ sauce. I swear the stuff should be commercially sold! It got great reviews from the family.

Yeah I have that convo. with my wife eve time I grill chops. "Yes dear, I'm sure it's all the way done."
