My wife fixed a roast (beef) the other day and there is too much for us to eat at this time.  I was wondering about making jerkey out of it if possible.  How would I deal with an already cooked roast?  This may be a dumb question but, I have to start somewhere.

I don't see why not....   dip it in some soy and spices... dredge it in Cracked Black Pepper (CBP)... set the smoker at 170 and wait.... 

If you don't like roast beef sammies, or hot beef dips, or SOS made with roast beef... give it a try...    Dave
