How hot do you think you can go inside before combustion? Can you cook at 275F?

I've been wanting to insulate my smoker and thought about using wood but didn't know at what point it would burn down. I have another option on the table at the moment but it's more work, wood would be much easier.

Looks great, by the way. I build rather than buy most of the time. Don't know if that always a good thing though.

I had the same issue with a hot plate. Switched to a double burner propane and maintain 250 deg with no problem. I seasoned it for 4 hours at over 300 deg and had no issues with combustion.
 
there is a Thermo fuze in the hotplate that limits how hot u can get it.  Insulate it if u live in cold weather area.  I have a large freezer made into a electric smoker and can get it up to 300 with no problems  using a single electric burner!
 
Can you post some pics about your burner? I like the idea of repurposing a coleman stove. I'm curious as to how you did it

Someone makes adapters for hooking up hose to coleman stoves...  then you can hook it to a big tank....
