After about a year of studying youtube and reading forums, anyone can get what they're after. This was my first rack of dino ribs ever. I have traveled and hit around 35-40 of the top 50 bbq list of Texas and me and my girlfriend (she has joined me at all of the locations) agree that my ribs are in the top 3 beef ribs we have ever had. I'm super proud of myself. These will sell like hot cakes. I was also very surprised at how easy beef ribs were too!

Thank you guys! Wish you were all here to try them. Anything I have left over I try to give to anyone in need ot want within a day. If you folks are in north Texad Lewisville area and I have cooked too much, I'll throw them yalls way!
 
I appreciate all of the likes guys! Now...next thing..who knows where I can get the REALLY fat beef ribs? These seemed kind of "thin" to me. Got these at the meat market in Lewisville Tx. Just found out Sam's stopped selling beef ribs and now I'm not sure where to go for some good thick ones. Any ideas guys!? Thank you!

Best way I know of is what I've been doing for years.
Just buy your Prime Ribs with "Bones-in".
Then when you get them home, cut the bones off, and leave how ever much meat you want on the bone side of your cut.

So you're looking for those huge beef ribs oft referred to as Dino Ribs.

This goes out to everybody who is on the lookout for racks of beef short ribs.
How to Find Racks of Short Ribs
Don't go looking for whole racks of short ribs to be for sale in the meat section, I've never found any that way.
I've always found them precut and repackaged for sale as specialty cuts.

Flanken, thin cut across the bones,
for such as Korean Kalbi ribs.
English, cut along the length of the bone usually in 3-4 inch sections.
Boneless, often labeled country style.

If you see any of these, ask the clerk if he has any of the whole racks uncut.
They come in a cryo-vac package, two racks per bag.
They generally will run $7.00 - $9.00 /lb.
Don't give up on one store, go to or call them all.
It's much better to go in person and look and ask.

When you find your racks of Short Ribs you're going to have one of two types.
Beef Plate, short ribs
Or
Beef Chuck, short ribs

How to tell the difference?

Number of, shape and length of bones is usually the best way to tell Plate and Chuck apart.
Plate are almost always 3 bones, the bones are flatter/wider than Chucks and their length usually exceeds 8", 8-12" is the norm.
Plates generally have more/,thicker meat and less fat cap.
Chuck's are almost always 4-5 bones, the bones aren't as flat/wide as Plates and their length is an average 8", 6-10" is the norm.
Chucks generally have less meat and more fat cap.
