My first corned beef

  1. Trimming time

    Brined for over 10 days.

    Going to be Pastrami on Sunday.

    Cooked until fork tender.

    The light loses the color.

    Corned beef on toasted rye with sauerkraut and mustard

    Now you know that no one in Alpine Texas except you is going to do Corned beef, and that's a shame cause it looks pretty tastee to me!

    Looks pretty awesome to me, I have one in brine now hoping this will be the year! LOL

    Great job, and don't tell those Cowboys what ya done to their brisket, just tell 'em its your own special Mother's BBQ recipe.
  3. LOL, My neighbor does a couple of hundred briskets a year and when I told him what I was going to do he just started shaking his head and laughing. He REALLY looked at me cross when I told him I was making Pastrami out of one of them.

    My daughter texted me awhile ago and said she never thought she would like corned beef.

    I don't know if it is beginners luck but it was relatively easy to do. Very proud of myself on this one.

    There is one more small piece I will do for St. Patrick's Day with cabbage.

    Alpine? I been there. Everybody wears hats and boots and the girls dip snuff. This all coming back now. Nice looking corned beef. Even little babies love that stuff. Great job! Where do yall buy briskets? Is the Chute #!1 still in bizness?

  5. bigwheel, LOL, the Chute and the Crystal Bar sometimes had some little girls that thought they were tough enough to dip snuff.

    The local store has a pretty good meat market, or Ben E. Keith by the case.

    The Chute closed 20 years ago and the Crystal closed last year.

    Well good show. Ben E. Keith is an excellent resource. I got kin who works for them. Do they have a retail dock in your area or do you have a tax number and other good stuff like that? You ever bump into a crazy old ex-hypo around there who goes by Jim Lagrange? Sure he is retired by now. He was working out there when the Mountain Lion decided to eat the kid.

  9. bigwheel, Ben E Keith is a friend of a friends cousin sorta deal. Jim Lagrange kinda sounds familiar but I was "out seeing the world" (LOL never left Texas) for almost 20years. Lots of people came and went in my absence.

    When were you out here? Bar SR Bar?
