That is some great looking BBB. When I get the opportunity to make up some BBB, I use the dry cure method also. Since Ma Dutch and I are temporarily living with one of our daughters, the spare fridge that I used for my meat projects is in storage. Trying to get Ma to loosen up the purse strings so I can get a "dorm" sized fridge without a freezer section so I can get back to making BBB and sausage.
