MUSHROOM JACK CHICKEN SANDWICH

Last night I made a mushroom jack chicken sandwich and some Brussels to go along with it. For those of you that have seen my posts about other burgers and sandwiches you know I like them big and messy. This one does not disappoint LOL

Start out with a buttered and toasted bun.

Then saute some mushrooms and onions

Next up split in half two chicken breasts
And pound them out a little bit

Season with salt pepper and garlic then into the cast iron pan. Once flipped add a ton of Jack cheese and the onions and mushrooms.

All melted

Then pile it on the bun

Cut in half with some Brussels

I almost grabbed a knife and fork for this one but I managed to get through with just a few extra napkins! Lol!

Thanks RAY! You know I almost went for bacon but i didnt want to open the 2lb pack that I had. ..next time maybe I'll do open faced with a load of bacon! Maybe gravy too???

That look fabulous!! Except for those little green things. Oh well, a little bacon on the sandwich will makeup for those.
