The pieces are on the big side but the flavor, amount, and price is fantastic. It's what I used in my Muffuletta Bologna attempt a couple of months back.
My lesson learned with making sausage out of it was to mix the meat and seasonings up first to where it's bind is good and THEN add this stuff in so that the vinegar hopefully doesn't mess with the bind.
I also drained this stuff in the fridge for 3-4 days.
