Most popular breakfast sausage ??

I don't really make breakfast sausage but one day I had some extra ground beef I needed to use and was wanting breakfast sausge.

Went SPOG with a hefty dose of Sage added. Was the best breakfast sausage I can remember eating ever haha. So I guess for me it's pretty simple. I like the flavor from Sage. I also like some red pepper in it too but I don't think I added any.

I know it's not a recipe but just wanted to give some direction incase you wanted to go super simple yet end up with great sausage. Often simplicity = better while cooking :)
 
Leggs #10 is good I also like PS seasonings #117. These have sage present, but not big time but good.
HI Mountain Seasonings has their “mountain man” breakfast mix. It’s also very good, but a bit mild for me so I use a little more seasoning per # of meat and it’s tasty but a bit more sagey.

I mix a Jimmey Dean nock off up to.

1# ground pork
1 tsp salt
1/4 tsp rubbed sage
1/4 tsp dried parsley
1/4 tsp black pepper
1/4 tsp tyme
1/4 tsp red pepper flake
1/4 tsp coriander
1/8 tsp mace (optional)
1/4 tsp Accent (msg)
This make a fairly mild sausage so you can up any of these ingredients or delete some.

These all work for us but we like sausage. YMMV.

My fave - over the counter is Jimmy Dean - Regular, Hot, and occasionally - Sage.

Breakfast Sausage - Jimmy Dean, Hot - Knock Off
  • 16 ounces ground pork
  • 1 teaspoon salt
  • 1/2 teaspoon cayenne pepper (or more, depending on how hot you want it!)
  • 1/4 teaspoon rubbed sage
  • 1/4 teaspoon fresh coarse ground black pepper
  • 1/4 teaspoon crushed red pepper flakes
  • 1/4 teaspoon coriander
  • 1/4 teaspoon msg
