Just had these show up from my friend "imported" from the Santa Barbara, CA Costco to me here in NY. Can't get these here, she is a flight attendant to a very wealthy man with his own huge jet so plenty of room to store these for me.

Two of them are now rubbed with Jeff's Texas rub and the other two are marinating in Yoshitios marinade. My plan is to smoke them to 115 deg, vacuum pack, freeze and when needed Sous Vide to 120 and reverse sear. This way I am only a couple hours away from freeze to table.

Nice how much does the big one weigh? It looks like the ones I get out here.....I've bought them up to 7lbs.
Man, you gotta try one cooked hot and fast over oak wood coals. S.P.O.G and a fresh rosemary bundle to brush them with a little olive oil and red wine vinegar. Cook them on the hottest part of the grill, turning them every 30 seconds or more. They turn out amazing, make sure to only cook them to rare to Med rare. I take a piece of paper and a pen and draw out which way the grain is running, because it changes directions, that way when I slice it I don't screw it up when I slice it. Then drizzle with chimichurri, a nice salad or grilled artichokes a loaf of crusty sourdough bread and bottle of good'ol dego red.

Trimmed about 2.5lb per, there are2 in each pack. Last time she went to a different costco and they were $5.99/lb. This time $7.99 in Santa Barbra.

Just reverse sheared some (4) yesterday on my grill. Brought them up to 115F then seared them to 130F-135F. Rubbed with Oakridge Carne Crosta Steakhouse rub. Delicious I have also used Oakridge Black Opps rub.

I always purchase prime tri tip and select the ones with highest marbeling. It's totally worth it. I follow Malcom Reed's first YouTube video recipe but cook it to 135 then reverse sear and rest

This one on my gas grill last month
