More curing

Filling the fridge with meat. Had two packs of bacon going, decided to give corned beef a try as well. Should be ready for Saint Patrick's day. Now to decide boiled or smoke it into pastrami. You guys are a bad influence on me!
 
If that's 2 pieces, do one of each. Not everyone in my house likes Corned Beef. For St.Patricks Day, a chunk of Corned Point goes in the pot to get started. An hour later, the Cabbage and veggies, the last hour a hunk of Boneless Ham goes in to heat to 150. It all comes out together and everybody gets the meat they like. The Smoked Ham gives everything a great flavor...JJ

It's just one chunk of chuck. The two are a ten pound belly cut in two. I've got a couple weeks to decide. Like it bother ways, may cut it in half.
