Moose brisket questions

My uncle has a buddy that just killed a moose this year. My uncle helped him process it, and got some meat out of the deal... including a brisket. He has been curious on how to cook it. So I figured I'd ask around.
The couple things I read on the interweb pretty much said cook it like a beef brisket. But my first thought was if IT was taken into... let's say 203, it could be dry as it's going to be a leaner meat.
Anyone have experience with this? I'd be interested in feedback. I've cooked a lot of deer & elk but never moose, and not any wild game brisket either. Let me know what you think...

Oh this was his bull, 2nd largest bull taken in Colorado with a bow, 6th largest in the continental US.

I've no idea how to cook it, but I'm curious to hear what a brisket from that beast weighs!
He said it's about 10 lbs, I was surprised to learn that moose brisket is smaller and thinner than beef. I guess cause of the body structure. The backstraps were about 6 ft and tenderloins were like football though lol

Magnificent bull. I’ve never cooked a moose brisket either, not really sure how I would approach that but I’d likely use my larding needle and lace some fat in it.
 
I’ve never done a wild game brisket bud… but here’s an idea!? This is how I’d likely approach the cook! Best of luck and please post it!

That's a good idea. That was my best guess, just using plenty of beef tallow to keep it from drying out. Thanks

I found that same article, and that was my thoughts as well.
I won't be doing the cook on this one, but I'll pass on to my uncle to take some pictures and hopefully be able to share.
