Monster Hatch Green Chili Chops

Guess it is hatch green chili season.

I was at Brookshire's (east TX grocery chain) the other day and came across these monster Hatch green chili pork chops. My wife generally likes thin pork chops and does not like anything associated with chilis, so I have never bought really thick pork chops like this. So far, my only exposure to hatch green chilis was during the hatch green chili "festival" at chuy's every year (except for this year due to all the covid-19 cr@#), which I always enjoy, so I couldn't resist these chops. Plus, THEY WERE ON SALE and cost less than 8 bucks.

I didn't do anything to the chops before putting them on the smoker. They were seasoned by Brookshire's with a very fine mixture of ground hatch green chilis and other stuff.

I initially put the on my pit boss 4 set to the smoke setting and loaded with mesquite pellets. The PB4 seems to run about 150 degrees on the smoke setting and I smoked them this way for two hours. I set the temperature to 250 degrees for the next hour. At this point, the internal temperature was at 145 degrees, perfect actually, but since they are so thick I wanted them to go a little higher. I set the temperature to 350 for 30 minutes expecting to get a little browning on the surface. Temperature next to the bone was 158 when I took them out.

I love the color on them. They were incredibly juicy and tender; and the smoke on them is absolutely wonderful. These are my favorite chops of all time. I actually bought three more today on my way home from work. I'm still in my honeymoon phase with my smoker. It is a pit boss 4 and very easy to use; which is probably why I love trying new things.

If you have never smoked really thick pork chops, I highly recommend you give it a try. You will not be disappointed.

Looks great!! I recently smoked some thick ones and they were awesome. I have a ton of chops in the freezer since I just got a whole hog a few weeks ago.
 
They look really good! Just butchered a hog last week and gave half to our vet, but after seeing a couple other threads on pork chops here had to cut a few for us. And just happened to buy some hatch chilis and a bottle of hatch chili seasoning at the store tonight...hhhhmmmmm

Very possibly! Not sure I've ever even had hatch chilies for sure. Wife doesn't like spicy, I do somewhat but my spicy is probably still very wimpy to some of you all. Just another add to the to do list

I bought some fresh hatch green chilis with the monster chops because I never tried them fresh. I was expecting a little heat in them, but they are basically a long version of the green peppers that are typically sold in the grocery store. No heat whatsoever, unfortunately.

You have to find the ones that say hot. They have real good heat.
 
They are beautiful. I too was expecting a chop in Hatch Chile Sauce. But I've had Rub made with Ground Dry Green Chiles and it was great. I ordered Fresh Chiles one year. With shipping to PA 5 pounds was $60! Hatch Chilies are good, but not $12 per pound, good...JJ

Those are some nice looking chops! Does Brookshire’s sell the seasoning by itself? I would love to go to a hatch festival in NM.

I don't recall for sure if I have had Hatch's before but I have never been a huge fan of chilis. That being said I wouldn't have any problem trying those chops if they were in front of me. They look incredible!
 
Very nice. I like a plain thick chop or a stuffed now and then, but wife prefers a thin chop grilled into a piece of shoe leather (sadly, I like it too) so that's what I usually cook.

I was expecting some chops draped in freshly roasted Hatch chiles or smothered in Green Chile.

I buy Costco's thick cut chops on a regular basis.
I love stuffing them before smoking.
I wonder if one can stuff a chop with chilies instead of ... stuffing?

Hatch (Valley) chilies may be one of over a dozen varieties. 1 of the varieties migrated west and is the well known Anaheim.

Local grocery store chain started a "Hatch Chili" promotion a couple years ago. You buy, they'll roast them for you. They also sell jars of Hatch salsa, etc.

BUT outside of New Mexico, "Hatch Chilies" may come from other sources than the actual Hatch Valley.
