plateau time is here!!!! it was sitting at 163 for the longest time and has actually dropped now to 158. hopefully it starts to rise again here soon, cause i'm getting hungry smelling it, and looking at it every hr to spritz it, which btw is comingt in another 7 mins!

Take a tip from an old timer who knows. Trash the hatchet and get a regular axe. Hatchets are inherently dangerous. Axes usually require 2 hands to use instead of one. I came this - close to losing a thumb once. Still have the scar to prove it.

thanks for the tip stan. thankfully i'll only have a scare too. funny thing is that i did have an axe. just didn't think to use it...that is until today when i split up more chunks. worked like a charm and i still have all my limbs.
time for another update....here it is after hitting 165 and into the foil. i'm going to throw it in the oven for the last part of it to save some gas for my big bbq this weekend.
well, you know you did good when the wife says that the smoker was worth it. and that was after the first smoke! while it took a little longer than i expected, everything turned out great! we didn't quite make the 2 hr rest period in the cooler, but did manage 1.5 hrs. i think my wife was a little more anxious than i was. we topped it off with a little home made bbq sauce (although it didn't need it) and everything was good to go. here's the final pics from today......
