This is chicken for my mom.

She likes it lean and thin. So I get breast then I slice it in half and pound it down.Then I coat with EVOO then season and cook High smoke( hickory pellets) for an hour then 375 until done

This batch is a mix of American Royal Chicken rub / Jack Daniels chicken rub/ salt & pepper rub and some local honey mustard rub. I just shut my cooker down and it has been running ( except for 30 minutes) since 1pm yesterday.

Through snow wind and rain it never missed a beat.Last week it did a 19 hour cook in minus 16 temps and ran flawless then as well and its two years old

its a great unit and I have their bottom of the line unit. I have ran it for hundreds of hours and thousands of pounds of pellets and its been flawless
 
Got a friend who who is a member of this forum who is looking at the Camp Chef Woodwind with the sear station. These units appear to offer a lot for not much money. Our local Cal-Ranch caries them. Appear well built.
