How do the rest of you keep mold from growing in your smokers when they're not in use? I have a Smokin-It, and it seems like I have to clean mold out of it every time I want to use it. Should I start leaving the door open?

I don’t have your smoker nor your humidity, but have you tried wiping everything down with vinegar?

My opinion is they need air flow . I also make a habit to run mine even if I'm not using it for a cook . Electrics are easy . Run it at 250 for an hour or so . Never had any mold issues with mine . Been outside since 2013 .

I close down the vents on my WSM when I'm not using it. Also don't use water in the water pan. Never had a mold issue, and TN is mighty humid in the summer.

I'm running it at top temperature right now. I'll also wipe out the bottom.
