Morning!

I have a question regarding moisture buildup.

Running a custom built electric smoker. Fully stainless.
Venturi smoke generator.

I smoke Olive Oil, Olives, Garlic and Salt... A lot of it.

I have a constant buildup of liquid smoke within the smoker. Sometimes it's so bad I have droplets forming everywhere. It's a real problem when smoking Oil.

Any tips? I had to idea of running the smoker at a low temp for short durations but extra virgin cold pressed oil doesn't like any heat.

Any brainiacs out there willing to lend a thought?

Air flow through the smoker...   air inlet and exhaust openings...   Venturi smoke generators make lots of creosote also..

Makes sense. The stack is a bit small... Leads me onto another issue. With the openings for the exhaust being larger doesn't it allow too much smoke to escape resulting in a longer smoking time &/ using more wood?

Having good air, flow through the smoker, makes for "clean" smoke and improved flavor to the meat...
