Thought I would start a TEASER thread. Building 10 lbs. of venison jerky. I will use both my dehydrator and smoker. I will start a batch on the dehydrator and smoker. Once my dehydrator is done I will move the smoker meat to dehydrator. I want to see what the differences is. Idid 5 lbs. of antelope jerky last week started on smoker and finished on dehydartor. Meat is soaking now. Will start the burn in the AM.

gotta love the tease jim-I have 13#s round been in marinade 3 days-hitting the smokers in the AM.Is it a room issue that u use the dehydrator? Looking foward to the finish pics.
 
No not a room issue. I prefer dehydrated. I had a buddy give me 5 lbs of Antelope. That I started on smoker and finished on dehydrator. It was a hit. I am not so sure on the other hand. I used a different jerky seasoning (local). But back to this experiment. It is all the same meat and seasoning. Try it two different ways and see what happens. It is jerky it will be GOOD!!!

I got 16lbs of beef jerky ready to go for tomorrow as well. Can't wait to see what your jerky looks like.

Thanks I have a few hours into it. I don't wheel as hard as you do anymore. But do wheel it.


Here is the beginning of the easy. The rest of the work is done.

First batch came off dehydrator. It has excellent taste will only get better with time. I will refrigarate overnight than vacuum pack. The batch on the smoker is drying as I speak. Should be a couple of hours. Take a looksy MMMM JERKY.

Well here is what happened. I had enough meat for 3 batches of jerky. All the same meat and seasoning.

1: 7 hours dehydrator
2: 7 hours light smoked 2 hours dehydrator
3: 2 hours heavy smoke ? dehydrator lost track of time pulled at midnight

Amazingly 3 different textures, taste and appearance. I still think I prefer all dehydrated. But I will it give the official taste test with a beer and Bronco's game this afternoon.

OH MAN, looks good. I don't put my jerky in the fridg to cool down, just put it in a brown paper bag (lunch sack). Let it do it's own thing.
