I woke up this morning and saw this thread and thought to myself, 'that's what I want for lunch today'. Showed the wife and she agreed. Only substituted jalapeños and real potatoes. IT WAS PHENOMENAL!!

Those darn enablers! But it does look really good! And I've had some instant mashed taters that aren't bad at all for the time they save!

My neighbor is going to make these for a party in the crock pot. She was my taste tester on the big ones and was very happy with them! Smaller meatballs, same seasonings.

The link you quoted was a double batch for the shotgun shells. Here's the single batch recipe for your convenience.

1 pound Ground Beef
1/2 pound Ground Pork
1/4 cup Parmesan Cheese
1 egg slightly beaten
1/2 cup ltalian Bread Crumbs
2 Tablespoons minced garlic
2 Teaspoons Kosher salt
1 Teaspoon Black Pepper
1/4 cup milk
1 Teaspoon dried Oregano
2 Teaspoons dried Parsley
