I've had it well over 500* but have cooked in the 250 range too. 250* is about the lowest i'd cook most stuff anyway. Yes i do think there's benefit to side air, at least two 3/4" and one of those a ball valve. The basket can get air from the sides and or the bottom and a ball valve will let you really fine tune temps i think. Initially i put the ball valve in for my auto controller (Guru or Pitmaster IQ) which i don't use much but in case i do its there so that's a bonus also.
Well i definetly gonna add a sear handle. So do you bennefit from the side ball valve alot? What temps can u achive with it?
Love it...the 2nd Jumbo mini out there aka Jimmy!
It is hard to drill out but i found that the 1" step bit starts the hole quickly and then allows you to use the smaller step bit to finish...use lubricant of course, i used dish soap.
T- i'd consider using side air also. If i did mine over i'd not use the weber vents i'd just use one or two 3/4 nipple with caps and the 3/4" ball valve. The reason being is i think it gets a even burn. I've found the bottom really doesn't clog so you shouldn't need that electrical box especially if you use side air also. ....
OH most important thing is the sear handle! The handle i connected to the bottom is the BEST thing i did. I use it to just get hot temps or open it up to sear with out burning your fingers. I have it set up so that if the handle is over to the right hitting one of the legs its shut, if it's over to the left lined up with my ball valve then it's 100% open and in between it's 50%.
It's closed in this pic but if it' was lined up with the ball valve it would be all open.
Last is i'd consider drilling bigger holes in the pizza pan to still diffuse but lets some drippings still hit the coals below.
The way this thing sears is INCREDIBLE!
Again AWESOME smoker!!! You'll love it!!!
Great video. Looks like you have a great smoker. Been thinking of building one myself.
