Just bought a mes 30" a few months ago and now a amps. Been smoking bacon and snack sticks so far, have some buckboard bacon in as we speak.( sorry no pics of the process).
I am a chef for a long time, been curing a smoking meats seriously at work for a few years. I raise pastured berkshire hogs on the side which fuels my passion.
