MES the way to go?

I`ve been looking to buy an electric smoker so I can do some winter smoking up here in FRIGID Michigan.It looks like the MES 30 is the way to go.Gander Mtn has a Smoky brand with double insulated walls,the MES doesn`t but it seems to be the most popular choice.Can you fit a whole slab of baby backs in the MES 30 the video shows the guy putting a half slab on each rack? And other than having to put hot water in the pan to warm it up to get it goin how would I season it before the first smoke and how does seasoning it affect the taste?
 
I own (2) Masterbuilt 40" Smokers, and use them in Minnesota, during the winter.  They have polyurethane insulation in the door, sides walls, top and bottom.  The new model with 1200 watt element is hard to beat.  Quick heat up and recovery.  The new model also has a remote control, wheels and handle for moving it around.

Best deal is at SAMS for $298 and get the extended warranty.

A full rack of ribs will not fir in the MES 30", but will in the MES 40"

I don't use water in the water pan.....Personal Preference

The reason to season it is to burn off all the oil from manufacturing.

I have a mes30 and you can not fit a whole rack of ribs on one rack,you have to cut them in half. The mes is very well insulated and hold heat well in the cold as long as you don't keep opening the door!!! After using my mes30 i have learned to love it but i wish i had the 40 for the extra room. Maybe someday when the wife isn't looking too close i can switch them!!!

I use my 30 2-3 times a week.

It works great.

Yes === I have to cut BBs and spares in half.

I can hang 10 pounds of sausage in it.

I can smoke a turkey in it.

    I paid 169 for it,shipped.  (amazon)

    Got the amazen and the therms.

    I am a happy guy!!

 Do you not use the water pan when hot smoking or only w/ the amns?

 How do you baffle the heat or do you?

Definitely go with the MES 40... After you have one for a while you would want to move up to it so just get it to start with...
